Description

A delightful stuffed salmon dish filled with fresh spinach and creamy feta, perfect for any occasion.


Ingredients

  • 4 salmon fillets
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped spinach to the skillet. Cook until wilted, stirring occasionally, for about 2-3 minutes.
  4. Remove the skillet from heat and mix in the crumbled feta cheese. Season with salt, pepper, and lemon juice.
  5. Cut a pocket in each salmon fillet.
  6. Generously stuff each salmon fillet with the spinach and feta mixture.
  7. Place the stuffed fillets on a baking sheet. Bake for 15-20 minutes or until cooked through.
  8. Garnish with fresh dill or parsley if desired, and serve.

Notes

Use wild-caught salmon for the best flavor. Experiment with different fillings for variations.
