- 4 salmon fillets
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh dill or parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the chopped spinach to the skillet. Cook until wilted, stirring occasionally, for about 2-3 minutes.
- Remove the skillet from heat and mix in the crumbled feta cheese. Season with salt, pepper, and lemon juice.
- Cut a pocket in each salmon fillet.
- Generously stuff each salmon fillet with the spinach and feta mixture.
- Place the stuffed fillets on a baking sheet. Bake for 15-20 minutes or until cooked through.
- Garnish with fresh dill or parsley if desired, and serve.
Notes
Use wild-caught salmon for the best flavor. Experiment with different fillings for variations.
