- 1 cup strawberries, sliced
- 2 cups all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 egg
- 1 cup powdered sugar
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, melted butter, and egg until well combined.
- Pour the wet mixture into the dry ingredients and stir gently until just mixed. Be careful not to over-mix; a little lumps are okay.
- On a floured surface, roll out the dough into a rectangle about 1/2 inch thick.
- Spread the sliced strawberries evenly over the dough, making sure to leave a small border around the edges.
- Starting from one long side, roll the dough tightly into a log, ensuring the strawberries stay tucked inside.
- Slice the rolled dough into individual rolls, about 1 inch thick, and place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for about 20 minutes or until they’re golden brown and smell heavenly.
- While the rolls bake, prepare the icing by mixing powdered sugar, lemon juice, and lemon zest in a bowl until smooth.
- Once the rolls are out of the oven, drizzle the lemon icing generously over them while they’re still warm. Serve immediately and enjoy!
