- 1 cup strawberries, chopped
- 1 cup lemonade
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the chopped strawberries, lemonade, and vanilla extract.
- In another bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the quick bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Room temperature ingredients help with easier mixing. You may substitute strawberries with other berries or peaches if needed.
