- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup chopped strawberries
- 1 cup powdered sugar
- 2–3 tbsp milk
- 1/2 tsp vanilla extract (for icing)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the rolled oats, all-purpose flour, baking soda, and salt. Set aside.
- Cream together the softened unsalted butter, brown sugar, and granulated sugar until smooth and fluffy.
- Beat in the egg and 1 teaspoon of vanilla extract until well incorporated.
- Gradually mix your dry ingredients into the wet mixture.
- Gently fold in the chopped strawberries.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Mix powdered sugar, milk, and 1/2 teaspoon of vanilla extract in a bowl until smooth to prepare the icing.
- Once the cookies have cooled, drizzle the icing over the top and let it set before serving.
Notes
Store cookies in an airtight container at room temperature for up to one week. For longer storage, freeze them for up to three months.
