Ingredients

- 1 package of puff pastry
- 2 cups fresh spinach, chopped
- 1/2 cup ricotta cheese
- 1/4 cup feta cheese, crumbled
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 clove garlic, minced
Instructions
- Preheat your oven to 400°F (200°C).
- Sauté the minced garlic in olive oil over medium heat until fragrant.
- Wilt the chopped spinach in the skillet until cooked down.
- Combine the spinach, ricotta, feta, Parmesan, beaten egg, salt, and pepper in a bowl.
- Roll out the puff pastry on a floured surface and slice into squares.
- Fill each square with a generous spoonful of the spinach mixture.
- Fold the corners over the filling and pinch the edges to seal.
- Place the puffs on a parchment-lined baking sheet.
- Bake for 20-25 minutes or until golden brown.
- Serve warm after slightly cooling.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for crispiness.
