- 8 ounces spaghetti
- 3 tablespoons unsalted butter
- 3 cloves garlic, grated or finely minced
- 1/4 teaspoon red pepper flakes
- 1 lemon, zested and then juiced
- 2 cups baby spinach
- 1/2 cup parmesan cheese, freshly grated
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a rolling boil.
- Add the spaghetti and cook according to package instructions, typically 9 to 10 minutes, until al dente. Reserve 1 cup of pasta water before draining.
- In a large skillet over medium heat, melt the unsalted butter slowly.
- Add the minced garlic and red pepper flakes to the skillet. Stir and cook for about 30 seconds to 1 minute.
- Pour in the lemon juice and the reserved 1/2 cup of pasta water. Let it bubble.
- Add the baby spinach and the drained spaghetti to the skillet. Toss until the spinach wilts and sauce clings to the noodles.
- If the sauce seems dry, add a little more pasta water (about 1/4 cup).
- Remove from heat and add lemon zest, parmesan cheese, salt, and black pepper. Toss to combine.
- Plate immediately, garnishing with extra cheese if desired.
Notes
For a richer flavor, add a dash of white wine after sautéing the garlic. Freshly grated parmesan is recommended for better taste.
