Description

A light yet hearty twist on comfort food, spaghetti squash noodles combined with garlic and red pepper flakes for a flavorful experience.


Ingredients

  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)
  • Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Drizzle olive oil inside the squash and sprinkle with salt and pepper.
  3. Place the squash cut side down on a baking sheet and roast for about 40 minutes or until fork-tender.
  4. Heat olive oil in a skillet over medium heat. Add minced garlic and red pepper flakes, sautéing until fragrant.
  5. Once the squash is cooked, use a fork to scrape the flesh into noodle-like strands. Add these to the skillet.
  6. Cook for another 2-3 minutes, adjusting seasoning as needed. Garnish with parsley and Parmesan cheese if desired.

Notes

Choose a heavy squash for tender flesh. Adjust spice levels to your preference.
