- 1 medium spaghetti squash
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
- Parmesan cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil inside the squash and sprinkle with salt and pepper.
- Place the squash cut side down on a baking sheet and roast for about 40 minutes or until fork-tender.
- Heat olive oil in a skillet over medium heat. Add minced garlic and red pepper flakes, sautéing until fragrant.
- Once the squash is cooked, use a fork to scrape the flesh into noodle-like strands. Add these to the skillet.
- Cook for another 2-3 minutes, adjusting seasoning as needed. Garnish with parsley and Parmesan cheese if desired.
Notes
Choose a heavy squash for tender flesh. Adjust spice levels to your preference.
