Delightfully simple Spicy Peanut Butter Noodles with a creamy, tangy sauce complemented by nutty flavors and a kick of heat.
Ingredients

- 16 ounces brown rice noodles
- 3 large cloves garlic (or 4–5 small)
- 1 tablespoon fresh grated ginger
- 1 tablespoon oil
- 2/3 cup creamy peanut butter (low/no salt)
- 4 tablespoons low sodium tamari or soy sauce
- 1/3 to 1 cup hot water
- 1 tablespoon rice vinegar
- 1 tablespoon toasted sesame oil
- 1–2 tablespoons sriracha
- 1–2 tablespoons maple syrup or honey
- 1/2 teaspoon red pepper flakes
- Optional: 2 teaspoons chili garlic sauce
Instructions
- Bring a large pot of water to a boil and cook the brown rice noodles according to package instructions until al dente. Drain and set aside.
- Finely mince the garlic and sauté in a pan with oil over low heat for about 2 minutes until golden brown.
- Add freshly grated ginger to the pan and sauté for 1 more minute.
- Remove the pan from heat and add the remaining sauce ingredients. Whisk in hot water until smooth, adjusting for desired consistency.
- Taste the sauce and make adjustments for saltiness, heat, or sweetness as desired.
- Add half of the sauce to the cooked noodles and toss gently until well-coated.
- Serve hot, garnished with crushed peanuts and sliced scallions, paired with veggies or protein of choice.
Notes
Let the garlic and ginger sauté slowly to develop flavors. Adjust spice levels to taste.
