Description

A vibrant explosion of flavors featuring tender chicken, crunchy broccoli, and silky rice noodles in a zesty garlic-soy sauce.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 8 oz rice noodles
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 cup soy sauce
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Chopped green onions (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Cook Your Noodles: Boil water according to package directions and cook rice noodles until tender but ‘al dente’. Drain and set aside.
  2. Whisk the Sauce Together: In a bowl, combine soy sauce, sriracha, and sesame oil. Whisk until smooth.
  3. Sear the Chicken: Season chicken breasts with salt and pepper. Heat vegetable oil in a skillet over medium-high heat, add chicken, cooking for 6-7 minutes on each side until golden brown. Set aside to rest.
  4. Sauté the Broccoli: In the same skillet, sauté broccoli for 3-4 minutes. Add garlic and ginger, sauté for another 1-2 minutes until fragrant.
  5. Combine Noodles and Sauce: Add cooked noodles and sauce to the skillet, tossing until noodles are coated, cooking for another 2-3 minutes.
  6. Serve & Garnish: Divide noodle bowls and top with sliced chicken, green onions, and sesame seeds.

Notes

Ensure chicken is at room temperature before cooking for even sear. Do not overcook broccoli for perfect texture.
