Description

A quick and flavorful dish featuring tender chicken, vibrant broccoli, and soft rice noodles in a spicy garlic sauce.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 8 ounces rice noodles
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon chili sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)
  • Green onions for garnish (optional)

Instructions

  1. Cook the rice noodles according to the package instructions. Once they are al dente, drain them and set aside.
  2. In a large skillet over medium heat, add the olive oil. Once it’s shimmering, toss in the minced garlic and sauté until fragrant, about 1 minute.
  3. Introduce the chicken breasts into the skillet, seasoning them generously with salt and pepper. Cook until browned and thoroughly cooked, about 6-7 minutes per side.
  4. Add the broccoli florets and cook for an additional 3-4 minutes, until tender yet vibrant.
  5. Pour in the soy sauce and chili sauce, mixing well to coat the chicken and broccoli.
  6. Add the cooked rice noodles to the skillet and toss everything together gently.
  7. Serve garnished with sesame seeds and sliced green onions.

Notes

Check the doneness of the chicken using a meat thermometer; target is 165°F. Feel free to swap the chicken for shrimp or tofu for a different protein experience.
