- 2 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 8 ounces rice noodles
- 4 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon chili sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
- Green onions for garnish (optional)
Instructions
- Cook the rice noodles according to the package instructions. Once they are al dente, drain them and set aside.
- In a large skillet over medium heat, add the olive oil. Once it’s shimmering, toss in the minced garlic and sauté until fragrant, about 1 minute.
- Introduce the chicken breasts into the skillet, seasoning them generously with salt and pepper. Cook until browned and thoroughly cooked, about 6-7 minutes per side.
- Add the broccoli florets and cook for an additional 3-4 minutes, until tender yet vibrant.
- Pour in the soy sauce and chili sauce, mixing well to coat the chicken and broccoli.
- Add the cooked rice noodles to the skillet and toss everything together gently.
- Serve garnished with sesame seeds and sliced green onions.
Notes
Check the doneness of the chicken using a meat thermometer; target is 165°F. Feel free to swap the chicken for shrimp or tofu for a different protein experience.
