Description

A hearty and flavorful potato soup infused with Cajun seasoning, perfect for chilly evenings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 carrots, diced
  • 6 cups vegetable or chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup heavy cream (optional)
  • Green onions or parsley for garnish

Instructions

  1. Sauté the olive oil over medium heat. Add the chopped onion, minced garlic, bell pepper, and diced carrots. Sauté until softened, about 5 minutes.
  2. Combine the diced potatoes, broth, diced tomatoes, and Cajun seasoning. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  3. Blend the soup to your desired consistency using an immersion blender or standard blender.
  4. Enrich the soup by stirring in the heavy cream if using. Season with salt and pepper to taste.
  5. Serve hot, garnished with green onions or parsley.
