- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 carrots, diced
- 6 cups vegetable or chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup heavy cream (optional)
- Green onions or parsley for garnish
Instructions
- Sauté the olive oil over medium heat. Add the chopped onion, minced garlic, bell pepper, and diced carrots. Sauté until softened, about 5 minutes.
- Combine the diced potatoes, broth, diced tomatoes, and Cajun seasoning. Bring to a boil, then reduce heat and simmer for about 20 minutes.
- Blend the soup to your desired consistency using an immersion blender or standard blender.
- Enrich the soup by stirring in the heavy cream if using. Season with salt and pepper to taste.
- Serve hot, garnished with green onions or parsley.
