Description

Ingredients

  • 1 cup bell peppers, chopped (any color)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup Italian dressing
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and rinse under cold water to cool down.
  2. Combine the cooked spaghetti, chopped bell peppers, halved cherry tomatoes, diced cucumbers, and thinly sliced red onion in a large bowl and toss gently.
  3. Whisk together the Italian dressing, olive oil, salt, and pepper in a small bowl, adjusting seasoning to taste.
  4. Pour the dressing over the salad and toss to ensure everything is evenly coated.
  5. Chill in the fridge for at least 30 minutes before serving to allow the flavors to meld.
