Description

A vibrant salad packed with chickpeas, black beans, corn, and creamy avocado, perfect for gatherings or a quick nutritious meal.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chickpeas, black beans, corn, red bell pepper, red onion, avocado, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve the salad chilled or at room temperature.

Notes

To keep avocado fresh, squeeze extra lime juice over cut pieces before adding. For a spicy kick, add diced jalapeños.
