Description

A delightful banana cake that’s soft and moist, perfect for using overripe bananas and filling your home with sweet aromas.

Ingredients

Scale
  • 3 ripe bananas
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Mash the ripe bananas until smooth.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time to the butter mixture, incorporating each before adding the next. Then stir in the vanilla extract.
  5. Mix in the mashed bananas.
  6. Whisk together the flour, baking soda, and salt in a separate bowl.
  7. Gradually add the dry ingredients to the banana mixture, mixing until just combined.
  8. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  9. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool the cake in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Use very ripe bananas for the best flavor. For variations, consider adding chocolate chips or nuts.
