- 1 white onion, diced
- 4 cloves garlic, minced
- 2 tsp. Italian seasoning
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. crushed red pepper flakes, optional
- 6 cups chicken stock
- 1 lb. boneless skinless chicken breasts
- 1/2 cup sundried tomatoes, chopped
- 1 cup heavy cream
- 2 Tbsp. cornstarch
- 4 cups fresh spinach
- 8 oz. broken lasagna noodles, cooked separately and drained
- Shredded parmesan cheese for serving
- Fresh parsley for serving
Instructions
- Start by combining the diced onion, minced garlic, Italian seasoning, salt, black pepper, and crushed red pepper flakes (if using) in the slow cooker.
- Pour in the chicken stock and give everything a hearty stir to combine.
- Add the chicken breasts, then sprinkle the chopped sundried tomatoes over the top.
- Cover your slow cooker and set it to low for 6-8 hours or high for 3-4 hours, until the chicken is tender and ready to shred.
- Remove the chicken breasts from the slow cooker and shred them with two forks. Return the shredded chicken to the slow cooker.
- In a separate bowl, whisk together the heavy cream and cornstarch until smooth, then pour this creamy mixture into the slow cooker.
- Cover and cook on high for an additional 30 minutes, allowing the soup to thicken beautifully.
- Prepare your lasagna noodles according to package instructions. Drain and set aside.
- Fold in the fresh spinach into the slow cooker until it just wilts and turns vibrant green.
- Add the cooked lasagna noodles to the slow cooker and stir to combine all those delicious flavors.
- Ladle the soup into bowls and top generously with shredded Parmesan cheese and a sprinkle of fresh parsley.
Notes
This soup pairs well with garlic bread or a crisp salad. Leftovers can be stored in the refrigerator for up to 4 days.
