Description

Tender chicken infused with Mediterranean spices, perfect for meal prep or a family dinner.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup chicken broth
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Pita bread
  • Tzatziki sauce
  • Sliced cucumbers
  • Sliced tomatoes
  • Thinly sliced red onions

Instructions

  1. Combine Ingredients: In a slow cooker, combine chicken thighs, chicken broth, garlic, oregano, cumin, paprika, salt, and pepper.
  2. Set the Slow Cooker: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and easily shredded.
  3. Shred the Chicken: Once cooked, shred the chicken in the slow cooker using two forks, mixing it with the remaining liquid for added flavor.
  4. Serve the Gyros: Serve the shredded chicken in pita bread, topped with tzatziki sauce, cucumbers, tomatoes, and red onions.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. You can also freeze shredded chicken gyros for up to 3 months. Add fresh herbs or feta for extra flavor.
