Ingredients

- 4 large potatoes, peeled and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (15 oz) diced tomatoes
- 1 cup heavy cream
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- Combine the diced potatoes, onion, garlic, vegetable broth, diced tomatoes, and Cajun seasoning in a slow cooker.
- Stir to combine and season the mixture with salt and pepper.
- Cover and cook on low for 6-8 hours, or until potatoes are tender.
- Add in the heavy cream during the last 30 minutes of cooking.
- Serve hot, garnished with chopped green onions.
