Description

A heartwarming and creamy Cajun Potato Soup that warms the soul and is perfect for chilly evenings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (15 oz) diced tomatoes
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Combine the diced potatoes, onion, garlic, vegetable broth, diced tomatoes, and Cajun seasoning in a slow cooker.
  2. Stir to combine and season the mixture with salt and pepper.
  3. Cover and cook on low for 6-8 hours, or until potatoes are tender.
  4. Add in the heavy cream during the last 30 minutes of cooking.
