Delightfully roasted artichokes infused with garlic and olive oil, perfect as an appetizer or side dish.
Ingredients

- 4 large artichokes
- 1 lemon, halved
- 2 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Trim the stems, peel away the outer leaves, and cut the tops off each artichoke. Rub the cut edges with lemon.
- In a bowl, combine olive oil, minced garlic, salt, and pepper.
- Brush the artichokes generously with the olive oil mixture.
- Place the artichokes face down on a baking sheet with a little water added to the sheet.
- Cover with foil and roast for about 40-45 minutes, or until tender.
- Garnish with freshly chopped parsley and serve warm.
Notes
Leftover artichokes can be stored in an airtight container for up to 3 days. Reheat in the oven.
