Description

Delightfully roasted artichokes infused with garlic and olive oil, perfect as an appetizer or side dish.


Ingredients

Scale
  • 4 large artichokes
  • 1 lemon, halved
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the stems, peel away the outer leaves, and cut the tops off each artichoke. Rub the cut edges with lemon.
  3. In a bowl, combine olive oil, minced garlic, salt, and pepper.
  4. Brush the artichokes generously with the olive oil mixture.
  5. Place the artichokes face down on a baking sheet with a little water added to the sheet.
  6. Cover with foil and roast for about 40-45 minutes, or until tender.
  7. Garnish with freshly chopped parsley and serve warm.

Notes

Leftover artichokes can be stored in an airtight container for up to 3 days. Reheat in the oven.
