- 8 oz pasta (your choice)
- 1 lb salmon fillets
- 1 cup pesto sauce
- 1 cup cherry tomatoes, halved
- 2 cups spinach
- Salt and pepper to taste
- Olive oil for cooking
- Parmesan cheese for serving (optional)
Instructions
- Boil the pasta according to package instructions, salting the water generously. Drain and set aside.
- Sauté the salmon in a skillet with a drizzle of olive oil over medium heat, seasoning with salt and pepper. Cook 4-5 minutes on each side.
- Wilt the spinach and cherry tomatoes in the same skillet until heated through.
- Combine the cooked pasta with the pesto in the skillet, stirring gently until well mixed.
- Fold in the flaked salmon, taking care not to break it apart too much.
- Serve hot, optionally topped with freshly grated Parmesan cheese.
Notes
This dish pairs well with a green salad and white wine. Leftovers can be stored in an airtight container for up to 3 days.
