Description

A quick and comforting pasta dish featuring omega-rich salmon, vibrant pesto, and sweet cherry tomatoes.


Ingredients

Scale
  • 8 oz pasta (your choice)
  • 1 lb salmon fillets
  • 1 cup pesto sauce
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • Salt and pepper to taste
  • Olive oil for cooking
  • Parmesan cheese for serving (optional)

Instructions

  1. Boil the pasta according to package instructions, salting the water generously. Drain and set aside.
  2. Sauté the salmon in a skillet with a drizzle of olive oil over medium heat, seasoning with salt and pepper. Cook 4-5 minutes on each side.
  3. Wilt the spinach and cherry tomatoes in the same skillet until heated through.
  4. Combine the cooked pasta with the pesto in the skillet, stirring gently until well mixed.
  5. Fold in the flaked salmon, taking care not to break it apart too much.
  6. Serve hot, optionally topped with freshly grated Parmesan cheese.

Notes

This dish pairs well with a green salad and white wine. Leftovers can be stored in an airtight container for up to 3 days.
