- 3 tablespoons miso paste
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- Salt and pepper to taste
- Chopped green onions for garnish
- Sesame seeds for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together the miso paste, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until smooth.
- Season the chicken thighs with salt and pepper, then coat them with the miso mixture.
- Place the chicken thighs on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the skin is crispy.
- Garnish with chopped green onions and sesame seeds before serving.
Notes
For maximum flavor, marinate chicken longer if possible. Use a meat thermometer to ensure the chicken is properly cooked.
