Description

Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup milk
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons poppy seeds
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Cut the cold, cubed butter into the flour mixture until it resembles coarse crumbs.
  4. Combine the milk, egg, lemon zest, poppy seeds, and vanilla extract in a separate bowl.
  5. Mix the wet ingredients into the dry ingredients until just combined.
  6. Pat the dough into a 1-inch thick circle on a floured surface.
  7. Shape the dough into wedges or fun shapes with a knife or cookie cutter.
  8. Bake for 15-20 minutes until golden brown and lightly springy to touch.
