Description

Delightful Pomegranate Caramels that capture the tangy sweetness of pomegranates in a velvety candy.


Ingredients

  • 1 cup pomegranate juice
  • 1 cup granulated sugar
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a saucepan, combine 1 cup of pomegranate juice and 1 cup of granulated sugar over medium heat. Stir until the sugar dissolves.
  2. Bring the mixture to a gentle simmer, letting it cook until it darkens and reaches a deep color, about 10-15 minutes.
  3. In a separate saucepan, heat 1/2 cup of heavy cream, 1/4 cup of butter, and 1/4 teaspoon of salt until melted together.
  4. Once the pomegranate mixture has thickened, carefully stir in the cream mixture and 1/2 teaspoon of vanilla extract.
  5. Cook this mixture for another 5-10 minutes until it reaches the soft ball stage, approximately 240°F (115°C).
  6. Pour the caramel into a greased dish and let it cool completely.
  7. Once set, cut into small squares and wrap in parchment paper.

Notes

Store in an airtight container at room temperature for up to two weeks, separated by parchment paper.
