Delightful Pomegranate Caramels that capture the tangy sweetness of pomegranates in a velvety candy.
Ingredients

- 1 cup pomegranate juice
- 1 cup granulated sugar
- 1/2 cup heavy cream
- 1/4 cup butter
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions
- In a saucepan, combine 1 cup of pomegranate juice and 1 cup of granulated sugar over medium heat. Stir until the sugar dissolves.
- Bring the mixture to a gentle simmer, letting it cook until it darkens and reaches a deep color, about 10-15 minutes.
- In a separate saucepan, heat 1/2 cup of heavy cream, 1/4 cup of butter, and 1/4 teaspoon of salt until melted together.
- Once the pomegranate mixture has thickened, carefully stir in the cream mixture and 1/2 teaspoon of vanilla extract.
- Cook this mixture for another 5-10 minutes until it reaches the soft ball stage, approximately 240°F (115°C).
- Pour the caramel into a greased dish and let it cool completely.
- Once set, cut into small squares and wrap in parchment paper.
Notes
Store in an airtight container at room temperature for up to two weeks, separated by parchment paper.
