Ingredients

  • 1 pre-made pie crust
  • 1 cup shelled pistachios
  • 2 cups milk
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • Whipped cream (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) to prepare for baking your delicious pie.
  2. Blend the shelled pistachios until they are fine.
  3. Combine the milk, sugar, cornstarch, and salt in a saucepan. Cook over medium heat, stirring constantly until thickened.
  4. Temper the egg yolks by whisking in a bit of the hot mixture.
  5. Mix the tempered egg yolks back into the saucepan. Add the pistachio puree, vanilla extract, and butter.
  6. Pour the mixture into the pre-made pie crust and bake for about 25 minutes until set but slightly jiggly in the center.
  7. Cool the pie completely in the refrigerator.
  8. Top with whipped cream and crushed pistachios before serving.
