- 1 pre-made pie crust
- 1 cup shelled pistachios
- 2 cups milk
- 3/4 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 1 tablespoon butter
- Whipped cream (for topping)
Instructions
- Preheat the oven to 350°F (175°C) to prepare for baking your delicious pie.
- Blend the shelled pistachios until they are fine.
- Combine the milk, sugar, cornstarch, and salt in a saucepan. Cook over medium heat, stirring constantly until thickened.
- Temper the egg yolks by whisking in a bit of the hot mixture.
- Mix the tempered egg yolks back into the saucepan. Add the pistachio puree, vanilla extract, and butter.
- Pour the mixture into the pre-made pie crust and bake for about 25 minutes until set but slightly jiggly in the center.
- Cool the pie completely in the refrigerator.
- Top with whipped cream and crushed pistachios before serving.
Notes
Use fresh, unsalted shelled pistachios. Allow the pie to cool completely for best results.
