- 1 (15.25 ounce) box yellow cake mix
- 2 (3.4 ounce) boxes instant pistachio pudding mix
- 4 eggs
- 1/4 cup vegetable oil
- 1/8 cup water
- 1 cup sour cream
- 2 tablespoons sugar
- 1 teaspoon cinnamon
- 1/2–1 cup chopped pistachios
- 2 cups powdered sugar (for glaze)
- 2 tablespoons melted butter (for glaze)
- 1 teaspoon almond extract (for glaze)
- 1 teaspoon vanilla extract (for glaze)
- Milk (for glaze)
Instructions
- Preheat the oven to 350 degrees F.
- Mix together the dry yellow cake mix and instant pistachio pudding mix.
- Add the eggs, vegetable oil, water, and sour cream, and mix until smooth.
- Combine the sugar and cinnamon in a small bowl.
- Grease two loaf pans and sprinkle with the sugar-cinnamon mixture.
- Evenly divide the batter between the two pans.
- Bake for 45 minutes or until a toothpick comes out clean.
- Remove from oven and cool in pans for about 10 minutes.
- Whisk together the ingredients for the glaze.
- Drizzle the glaze over the cooled loaves and sprinkle with chopped pistachios.
- Slice and serve with friends!
