  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 cup crushed pineapple, drained
  • 1/2 cup maraschino cherries, halved

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cookie sheet.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract until smooth.
  4. In a separate bowl, mix the flour, baking soda, and salt, then gradually add to the creamed mixture until just combined.
  5. Fold in the crushed pineapple evenly.
  6. Drop dollops of dough onto the prepared cookie sheet, leaving space between each.
  7. Place a half maraschino cherry on top of each cookie.
  8. Bake for 10-12 minutes or until the edges are golden. Cool on the sheet for a few minutes before transferring to wire racks.
