Instructions
- Preheat your oven to 350 degrees Fahrenheit and prepare a 9×13 baking pan with parchment paper.
- Combine 1 1/2 cups flour, 1/2 cup granulated sugar, and 1/4 tsp salt in a mixing bowl. Cut in the cold, cubed butter until the mixture resembles coarse crumbs. Press the mixture evenly into the base of the prepared pan.
- Bake the crust for about 15 minutes until lightly golden, then allow it to cool slightly.
- Whisk together the two large eggs and 1 cup granulated sugar until smooth and creamy.
- Mix in 1/4 cup flour, 1/2 tsp baking powder, and 1 tsp vanilla extract to your egg mixture.
- Fold in the well-drained crushed pineapple carefully.
- Pour the pineapple filling evenly over the cooled crust.
- Bake again for an additional 25-30 minutes until the edges are set and the middle looks slightly wobbly.
- Cool completely in the pan and dust with powdered sugar before slicing into squares.
- Garnish optionally with shredded coconut or pineapple slices for extra flavor.
