Ingredients

  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 3/4 cup cold unsalted butter, cubed
  • 1 cup crushed pineapple, well drained
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • Powdered sugar for dusting
  • Optional: 1/2 cup shredded coconut
  • Optional: pineapple slices or toasted coconut for garnish

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and prepare a 9×13 baking pan with parchment paper.
  2. Combine 1 1/2 cups flour, 1/2 cup granulated sugar, and 1/4 tsp salt in a mixing bowl. Cut in the cold, cubed butter until the mixture resembles coarse crumbs. Press the mixture evenly into the base of the prepared pan.
  3. Bake the crust for about 15 minutes until lightly golden, then allow it to cool slightly.
  4. Whisk together the two large eggs and 1 cup granulated sugar until smooth and creamy.
  5. Mix in 1/4 cup flour, 1/2 tsp baking powder, and 1 tsp vanilla extract to your egg mixture.
  6. Fold in the well-drained crushed pineapple carefully.
  7. Pour the pineapple filling evenly over the cooled crust.
  8. Bake again for an additional 25-30 minutes until the edges are set and the middle looks slightly wobbly.
  9. Cool completely in the pan and dust with powdered sugar before slicing into squares.
  10. Garnish optionally with shredded coconut or pineapple slices for extra flavor.
