  • 4 large chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 cup basil pesto
  • 8 oz fresh mozzarella, sliced
  • 10 oz cherry tomatoes

Instructions

  1. Preheat your oven to 425°F and spray a baking dish with non-stick cooking spray.
  2. Place the chicken breasts in the baking dish in a single layer and drizzle with olive oil.
  3. Season the chicken with salt, black pepper, paprika, and garlic powder, rubbing the spices in evenly.
  4. Spread the basil pesto over the chicken breasts, ensuring each piece is coated.
  5. Top with sliced mozzarella cheese and scatter cherry tomatoes around the pan.
  6. Cover with foil and bake for 20 minutes, then remove foil and bake for another 5-15 minutes until chicken is cooked through and browned.
