Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 can coconut milk
  • 1/2 cup peanut butter
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Chopped cilantro for garnish
  • Cooked rice for serving

Instructions

  1. In a large skillet, heat some oil over medium heat and sauté the onion until translucent.
  2. Add garlic and ginger to the skillet and cook for another minute.
  3. Add the chicken pieces and cook until no longer pink.
  4. Stir in the curry powder and cook for another minute.
  5. Add the coconut milk and peanut butter, stirring until combined.
  6. Simmer for 15-20 minutes until the sauce thickens.
  7. Season with soy sauce, salt, and pepper based on your preferences.
  8. Serve over cooked rice and garnish with chopped cilantro.

Notes

Adjust the spice to your liking by adding more curry powder or chili flakes. Use natural peanut butter for a healthier option.
