- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 cups fresh peaches, diced
- 1 teaspoon cinnamon
- 1 tablespoon cornstarch
- 1 egg (for egg wash)
- Sugar for sprinkling
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin with butter or cooking spray.
- In a large bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.
- In a separate bowl, combine the melted butter, milk, and vanilla extract. Gradually pour into the dry mixture, stirring gently until just combined.
- Toss the diced peaches with cinnamon and cornstarch until evenly coated.
- On a lightly floured surface, roll out the dough into a large rectangle, then cut into strips.
- Fill each strip of dough with the peach mixture, folding or rolling to fit into the muffin tin.
- Brush the tops with egg wash and sprinkle sugar on top.
- Bake for 20-25 minutes, or until golden brown.
- Let cool slightly before serving.
Notes
Serve with vanilla ice cream or whipped cream for an added treat.
