Description

Delightful peach cobbler cupcakes that capture the essence of summer in every fluffy bite.


Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh peaches, diced
  • 1 tsp cinnamon
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the melted butter, eggs, vanilla extract, and milk until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced peaches and cinnamon.
  5. Divide the batter evenly among the cupcake liners.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cupcakes to cool in the tin for a few minutes before transferring to a wire rack.

Notes

You can add a dollop of whipped cream or a scoop of vanilla ice cream for serving.
