Ingredients

  • 1 lb flank steak
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup cauliflower rice
  • 1 cup bell peppers, sliced
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. Marinate the flank steak by whisking together olive oil, lime juice, garlic powder, onion powder, chili powder, salt, and pepper. Coat the steak and let it marinate for 30 minutes.
  2. Heat a grill or skillet over medium-high heat.
  3. Cook the marinated flank steak for 4-5 minutes on each side until desired doneness.
  4. Remove steak from heat and let it rest for 5 minutes.
  5. Sauté the bell peppers in the same skillet until softened, about 3-4 minutes.
  6. Prepare the cauliflower rice according to package instructions or steam until tender.
  7. Assemble the bowl starting with cauliflower rice, then layer with sliced flank steak, sautéed bell peppers, and avocado.
  8. Garnish with fresh cilantro.
