Ingredients

Scale
  • 1 large green or red cabbage
  • 3 tablespoons olive oil (or melted butter)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt (adjust to taste)

Instructions

  1. Preheat the oven or air fryer to 400°F (200°C) or 375°F (190°C).
  2. Prepare the cabbage by slicing it into 3/4-inch thick rounds.
  3. Create the seasoning mixture by combining olive oil, garlic powder, smoked paprika, onion powder, dried thyme, salt, and black pepper in a bowl.
  4. Brush the seasoning mixture onto both sides of each cabbage round.
  5. Roast in the oven for 25 to 30 minutes, flipping halfway.
  6. Air fry for 10 to 15 minutes, flipping halfway, if using an air fryer.
  7. Cool briefly, then garnish with optional toppings.
  8. Serve immediately while warm and crispy.

Notes

These cabbage steaks can be paired with grilled meats or served on their own. Store leftovers in an airtight container in the fridge for up to 3 days.
