- 1 cup rice
- 2 cups vegetable broth
- 1 cup mushrooms, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Sauté the chopped onions and minced garlic until soft and fragrant, about 3-4 minutes.
- Brown the sliced mushrooms, stirring occasionally for about 5-6 minutes.
- Stir in the rice and cook for 1-2 minutes.
- Pour in the vegetable broth, season with salt and pepper, and bring to a boil.
- Simmer the rice on low for 18-20 minutes, covered.
- Fluff the rice with a fork and garnish with fresh parsley before serving.
Notes
Rinse the rice before cooking to prevent it from becoming gummy. For extra flavor, add soy sauce or nutritional yeast while sautéing.
