Ingredients

- 1 lb gnocchi
- 1 lb chicken breast, diced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat the olive oil over medium heat in a large pot.
- Add diced onion and garlic, and sauté until translucent.
- Add the diced chicken and cook until browned and cooked through.
- Stir in the thyme, salt, and pepper.
- Add the chicken broth and bring to a simmer.
- Add the gnocchi and cook according to package instructions.
- Stir in the heavy cream and frozen vegetables, and simmer until heated through.
- Serve warm and enjoy!
Notes
For added depth, consider adding a splash of white wine after browning the chicken.
