Description

A comforting and simple one-pot meal featuring tender chicken, pillowy gnocchi, and colorful vegetables in a creamy broth.


Ingredients

Scale
  • 1 lb gnocchi
  • 1 lb chicken breast, diced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil over medium heat in a large pot.
  2. Add diced onion and garlic, and sauté until translucent.
  3. Add the diced chicken and cook until browned and cooked through.
  4. Stir in the thyme, salt, and pepper.
  5. Add the chicken broth and bring to a simmer.
  6. Add the gnocchi and cook according to package instructions.
  7. Stir in the heavy cream and frozen vegetables, and simmer until heated through.
  8. Serve warm and enjoy!

Notes
