- 1 lb chicken thighs
- 1 can (10 oz) diced green chilies
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped cilantro (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium heat.
- Season the chicken thighs with salt, pepper, garlic powder, and onion powder.
- Add the seasoned chicken to the skillet and sear until golden brown on both sides.
- Remove the chicken from the skillet and set it aside.
- Add diced green chilies, chicken broth, and heavy cream to the skillet and stir to combine.
- Return the chicken to the skillet, spoon sauce over the top, and sprinkle with shredded cheese.
- Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through.
- Garnish with chopped cilantro before serving.
Notes
Serve with steamed broccoli or a crisp green salad. Leftovers can be stored in an airtight container for up to 3-4 days.
