Description

A creamy, cheesy keto-friendly dish featuring succulent chicken thighs, zesty green chilies, and oozing layers of cheese, all cooked in one skillet for easy cleanup.


Ingredients

  • 1 lb chicken thighs
  • 1 can (10 oz) diced green chilies
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped cilantro (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Season the chicken thighs with salt, pepper, garlic powder, and onion powder.
  4. Add the seasoned chicken to the skillet and sear until golden brown on both sides.
  5. Remove the chicken from the skillet and set it aside.
  6. Add diced green chilies, chicken broth, and heavy cream to the skillet and stir to combine.
  7. Return the chicken to the skillet, spoon sauce over the top, and sprinkle with shredded cheese.
  8. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through.
  9. Garnish with chopped cilantro before serving.

Notes

Serve with steamed broccoli or a crisp green salad. Leftovers can be stored in an airtight container for up to 3-4 days.
