Ingredients

  • 1 lb chicken thighs or breasts, boneless and skinless
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Season the chicken with garlic powder, onion powder, salt, and pepper, and cook until browned.
  2. In a bowl, mix honey and BBQ sauce together.
  3. Pour the sauce over the chicken and stir to coat evenly.
  4. Add the rice and chicken broth to the skillet, stirring to combine.
  5. Bring to a simmer, reduce the heat to low, cover, and cook for about 20 minutes or until the rice is tender.
  6. Serve warm, garnished with chopped green onions if desired.

Notes

For added depth of flavor, consider marinating the chicken in the honey BBQ sauce for a few hours before cooking. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
