Description

A comforting casserole featuring tender chicken and riced cauliflower, topped with melted cheese, perfect for healthy indulgence.


Ingredients

  • 1 pound cooked chicken, shredded
  • 3 cups riced cauliflower
  • 2 cups shredded cheese (cheddar and mozzarella)
  • 1 cup chicken broth
  • 1/2 cup cream cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the shredded chicken, riced cauliflower, 1 1/2 cups of shredded cheese, chicken broth, cream cheese, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
  3. Pour the mixture into a greased casserole dish and spread it out evenly.
  4. Top with the remaining 1/2 cup of cheese.
  5. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  6. Garnish with chopped green onions before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, add a splash of chicken broth.
