- 1 pound cooked chicken, shredded
- 3 cups riced cauliflower
- 2 cups shredded cheese (cheddar and mozzarella)
- 1 cup chicken broth
- 1/2 cup cream cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup chopped green onions (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Mix the shredded chicken, riced cauliflower, 1 1/2 cups of shredded cheese, chicken broth, cream cheese, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
- Pour the mixture into a greased casserole dish and spread it out evenly.
- Top with the remaining 1/2 cup of cheese.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden.
- Garnish with chopped green onions before serving.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, add a splash of chicken broth.
