- 2 pounds baby potatoes
- 1/2 cup unsalted butter
- 1 packet ranch seasoning mix
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup chopped green onions
- 1/2 cup cooked bacon, crumbled
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the baby potatoes and place them in a large pot. Cover with water and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.
- Drain the potatoes and allow them to cool slightly, making them easier to handle.
- In a mixing bowl, combine melted butter and ranch seasoning mix. Toss the potatoes in this mixture until they are evenly coated.
- Transfer the potatoes to a baking sheet and roast them in the oven for 25-30 minutes until they are golden and crispy.
- Once roasted, remove the potatoes from the oven and transfer them to a serving dish.
- Top the potatoes with sour cream, cheddar cheese, green onions, and crumbled bacon.
- Serve warm and enjoy!
Notes
