Description

Delightful cupcakes featuring a rich chocolate base with refreshing mint frosting, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/2 cup hot water
  • Chocolate frosting
  • Crushed mint candies or chocolate mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, mix the melted butter, eggs, vanilla extract, and peppermint extract until well combined.
  4. <li Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

  5. Carefully stir in the hot water until the batter is smooth.
  6. Fill each cupcake liner about 2/3 full with batter.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cupcakes to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, frost with chocolate frosting and garnish with crushed mint candies or mint leaves.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or in the fridge for up to a week. Can be frozen without frosting for up to 2 months.
