- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/2 cup hot water
- Chocolate frosting
- Crushed mint candies or chocolate mint leaves for garnish
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- In another bowl, mix the melted butter, eggs, vanilla extract, and peppermint extract until well combined.
- Carefully stir in the hot water until the batter is smooth.
- Fill each cupcake liner about 2/3 full with batter.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cupcakes to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, frost with chocolate frosting and garnish with crushed mint candies or mint leaves.

Notes
Store leftovers in an airtight container at room temperature for up to 3 days or in the fridge for up to a week. Can be frozen without frosting for up to 2 months.
