Description

Delightful mini muffins that are gluten-free and vegan, crafted with the essence of apple and warm spices.


Ingredients

  • 1 cup gluten-free flour blend
  • 1/2 cup almond milk
  • 1/2 cup applesauce
  • 1/4 cup maple syrup
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 apple, peeled and diced
  • 1/4 cup walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners or grease it.
  2. In a mixing bowl, combine the gluten-free flour, baking soda, baking powder, cinnamon, and salt. Stir gently.
  3. In another bowl, whisk together the almond milk, applesauce, and maple syrup.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the diced apple and nuts (if using).
  6. Spoon the batter into the mini muffin tin, filling each cup about 3/4 full.
  7. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.

Notes

For extra moisture, substitute some or all of the applesauce with mashed bananas. Add vanilla extract for flavor enhancement.
