Delightful mini muffins that are gluten-free and vegan, crafted with the essence of apple and warm spices.

- 1 cup gluten-free flour blend
- 1/2 cup almond milk
- 1/2 cup applesauce
- 1/4 cup maple syrup
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 apple, peeled and diced
- 1/4 cup walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners or grease it.
- In a mixing bowl, combine the gluten-free flour, baking soda, baking powder, cinnamon, and salt. Stir gently.
- In another bowl, whisk together the almond milk, applesauce, and maple syrup.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the diced apple and nuts (if using).
- Spoon the batter into the mini muffin tin, filling each cup about 3/4 full.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.
Notes
For extra moisture, substitute some or all of the applesauce with mashed bananas. Add vanilla extract for flavor enhancement.
