Description

Delightful mini muffins with sprinkles and Greek yogurt for a fun twist on breakfast.


Ingredients

  • 1 cup plain Greek yogurt
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. In a mixing bowl, combine the Greek yogurt, sugar, vegetable oil, egg, and vanilla extract. Mix until smooth.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the sprinkles.
  6. Fill each muffin cup about two-thirds full with batter.
  7. Bake for 10-12 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.
