Description

Delightful individual cheesecakes perfect for Easter celebrations, combining creamy indulgence with festive toppings.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 cup sour cream
  • 1 package crushed graham crackers
  • 1/4 cup melted butter
  • Easter-themed candies or decorations

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine the crushed graham crackers and melted butter until every crumb is coated. Press firmly into the bottom of muffin tins lined with cupcake liners.
  3. In another bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
  4. Add the eggs one at a time to the cream cheese mixture, mixing well after each addition.
  5. Gently fold in the sour cream until the mixture is smooth.
  6. Pour the cheesecake mixture over the graham cracker crust in each muffin tin, filling generously.
  7. Bake for 20-25 minutes, until the cheesecakes have set but have a slight jiggle in the center.
  8. Let cool before transferring to the refrigerator. Chill for at least 2 hours.
  9. Before serving, top with Easter-themed candies or decorations.

Notes

For a smoother filling, ensure cream cheese is very soft before beating. Optional: Add lemon zest for a refreshing tang.
