- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 eggs
- 1/2 cup sour cream
- 1 package crushed graham crackers
- 1/4 cup melted butter
- Easter-themed candies or decorations
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine the crushed graham crackers and melted butter until every crumb is coated. Press firmly into the bottom of muffin tins lined with cupcake liners.
- In another bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
- Add the eggs one at a time to the cream cheese mixture, mixing well after each addition.
- Gently fold in the sour cream until the mixture is smooth.
- Pour the cheesecake mixture over the graham cracker crust in each muffin tin, filling generously.
- Bake for 20-25 minutes, until the cheesecakes have set but have a slight jiggle in the center.
- Let cool before transferring to the refrigerator. Chill for at least 2 hours.
- Before serving, top with Easter-themed candies or decorations.
Notes
For a smoother filling, ensure cream cheese is very soft before beating. Optional: Add lemon zest for a refreshing tang.
