Instructions

  1. Rinse the rice under cold water until the water runs clear.

  3. Add the chopped onion and minced garlic, sautéing until translucent.
  4. Stir in the bell pepper, cherry tomatoes, and olives; cook for 5 minutes.
  5. Add the rinsed rice, stirring to combine.
  6. Pour in the vegetable broth and bring to a boil.
  7. Reduce heat, cover, and let it simmer for 15-20 minutes.
  8. Fluff the rice with a fork, seasoning with oregano, salt, and pepper, and garnish with fresh parsley.
