- 4 chicken thighs
- 2 tablespoons olive oil
- 1 lemon (zested and juiced)
- 1 cup artichoke hearts (canned or frozen)
- 1/2 cup Kalamata olives (pitted and halved)
- 4 garlic cloves (minced)
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, oregano, salt, and pepper. Whisk until well mixed.
- Add the chicken thighs to the bowl and coat them well with the marinade. Let it sit for at least 15 minutes.
- In a baking dish, place the marinated chicken, artichoke hearts, and olives.
- Pour any remaining marinade over the chicken and vegetables.
- Bake in the preheated oven for about 30-35 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Garnish with fresh parsley before serving.
Notes
Marinate chicken longer for enhanced flavor. This marinade is also great for fish and grilled vegetables.
