Description

A flavorful dish with succulent chicken thighs marinated in a zesty blend of lemon, garlic, artichokes, and Kalamata olives, encapsulating the essence of Mediterranean cuisine.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 1 cup artichoke hearts (canned or frozen)
  • 1/2 cup Kalamata olives (pitted and halved)
  • 4 garlic cloves (minced)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, oregano, salt, and pepper. Whisk until well mixed.
  3. Add the chicken thighs to the bowl and coat them well with the marinade. Let it sit for at least 15 minutes.
  4. In a baking dish, place the marinated chicken, artichoke hearts, and olives.
  5. Pour any remaining marinade over the chicken and vegetables.
  6. Bake in the preheated oven for about 30-35 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Garnish with fresh parsley before serving.

Notes

Marinate chicken longer for enhanced flavor. This marinade is also great for fish and grilled vegetables.
