- 4 boneless, skinless chicken breasts
- 2 lemons, juiced and zested
- 1/2 cup olives (Kalamata or green), pitted and halved
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Combine the lemon juice, zest, minced garlic, olive oil, oregano, salt, and pepper in a bowl to create the marinade.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Preheat the oven to 400°F (200°C).
- Place marinated chicken in a baking dish and scatter olives over the top.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Garnish with fresh parsley before serving.
