- 2 chicken breasts, diced
- 1 ripe mango, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 can coconut milk
- 2 tablespoons curry powder
- Salt and pepper to taste
- 2 tablespoons oil
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan over medium heat. Add onions, garlic, and ginger, and sauté until onions are translucent.
- Add chicken pieces and cook until browned.
- Stir in curry powder and cook for another minute.
- Pour in coconut milk and add the diced mango. Stir slowly.
- Simmer for 15-20 minutes until the chicken is cooked through and the sauce thickens.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro and serve with rice.
Notes
For added flavor, marinate the chicken in lime juice and curry powder before cooking. Adjust spice levels by adding cayenne pepper or chili.
