Description

A hearty and comforting taco casserole without the excess carbs, perfect for family gatherings or busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 can diced tomatoes
  • 1 can black olives, sliced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning (low carb)
  • 1 cup cauliflower rice
  • 1 bell pepper, diced
  • 1 onion, diced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and bell pepper, and sauté for 3-4 minutes.
  3. Add the ground beef to the skillet and cook until browned, about 5-7 minutes. Drain any excess fat.
  4. Stir in the taco seasoning, diced tomatoes, black olives, and cauliflower rice. Mix well.
  5. Transfer the mixture into a greased casserole dish and spread it out evenly.
  6. Sprinkle the shredded cheese over the top.
  7. Bake for 25-30 minutes, until cheese is melted and bubbly.
  8. Let cool slightly before serving.

Notes

Serve with sour cream, cilantro, or avocado, and pair with a simple salad.
