Ingredients

- 1 lb ground beef
- 1 can diced tomatoes
- 1 can black olives, sliced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning (low carb)
- 1 cup cauliflower rice
- 1 bell pepper, diced
- 1 onion, diced
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and bell pepper, and sauté for 3-4 minutes.
- Add the ground beef to the skillet and cook until browned, about 5-7 minutes. Drain any excess fat.
- Stir in the taco seasoning, diced tomatoes, black olives, and cauliflower rice. Mix well.
- Transfer the mixture into a greased casserole dish and spread it out evenly.
- Sprinkle the shredded cheese over the top.
- Bake for 25-30 minutes, until cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
Serve with sour cream, cilantro, or avocado, and pair with a simple salad.
