Description

A delicious and comforting low carb twist on the classic meatloaf, featuring lean ground beef, almond flour, and Parmesan cheese.


Ingredients

  • 1 lb ground beef
  • 1/2 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 cup sugar-free ketchup (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the ground beef, almond flour, Parmesan cheese, eggs, chopped onion, minced garlic, Worcestershire sauce, salt, pepper, and thyme in a large bowl. Mix until well combined.
  3. Shape the mixture into a loaf and place it in a greased baking dish.
  4. Top with sugar-free ketchup for a glossy finish.
  5. Bake for 45-55 minutes or until the internal temperature reaches 160°F (71°C).
  6. Let the meatloaf sit for 10 minutes before slicing and serving.

Store leftovers in an airtight container for up to 4 days or freeze sliced pieces for up to 2 months.
