Instructions
- Preheat the oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
- Cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and cooled Earl Grey tea.
- In a separate bowl, combine the flour, baking powder, baking soda, and salt, then gradually add to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
- Cool completely in the pan on a wire rack.
- Whip the heavy cream with powdered sugar and lemon zest until soft peaks form.
- Frost the cooled cake with the whipped cream and serve.
