Ingredients

  • 1 pound ground turkey
  • 1 cup finely chopped spinach
  • 1/2 cup grated zucchini
  • 1/2 cup chopped bell pepper
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup gluten-free breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, spinach, zucchini, bell pepper, onion, garlic, gluten-free breadcrumbs, Parmesan cheese, egg, Italian seasoning, salt, and pepper.
  3. Mix until all ingredients are well incorporated.
  4. Form the mixture into meatballs, about 1-1.5 inches in diameter.
  5. Place the meatballs on a baking sheet lined with parchment paper.
  6. Drizzle with olive oil.
  7. Bake for 20-25 minutes, or until the meatballs are cooked through and golden brown.
